healthy granola bars

So many granola bars on the market are loaded with sugar and unhealthy oils, and don't have much fiber or protein. Whenever I recommend snacks to my clients I always make sure they're balanced with protein, fiber, and healthy fats.  That's why I created this granola bar recipe - it checks all three boxes with protein from egg, peanut butter, nuts, seeds, and optional collagen peptides, fiber from oats, and healthy fat from nuts & seeds.

Each of these bars (recipe makes 8 bars) has 15 g of protein and 6 grams of fiber, which is much more than your typical granola bar.  They're easy to make, delicious, and so filling you can even eat one for a convenient breakfast. Enjoy!

Healthy Granola Bars Recipe

ingredients

  • 2 ½ cups rolled oats

  • 3/4 cup peanut butter (can sub almond butter, sunflower seed butter, or cashew butter)

  • ⅓ cup maple syrup

  • ½ cup mini chocolate chips 

  • 2 eggs

  • ½ cup sunflower seeds, pumpkin seeds, chopped almonds, pecans, or walnuts

  • ½ tsp salt

  • Optional extra protein: 2 Tbs collagen peptides

Preparation

  1. Preheat oven to 350℉.

  2. Combine all of the ingredients in one bowl and mix well.

  3. Transfer to a parchment paper lined 9x9 inch baking dish and firmly press into pan.  Top with extra chocolate chips if desired and press down into dough.

  4. Bake for 15-17 minutes or until the center is baked through. 

  5. Let cool completely before cutting into bars.
